Thakurgaon Correspondent: As the winter chill sets in Thakurgaon, the local season for collecting date palm sap and making jaggery has begun. Braving the morning mist, sap collectors and farmers start their work by the stove, gathering fresh sap dripping from date palm trees. The sight of the sap being boiled over smoke-filled straw stoves seems to herald the arrival of winter.

Jaggery makers say that sap is collected every morning and boiled from noon till night to produce pure, dark, granular jaggery. With the start of winter, the new jaggery has appeared in the market, attracting considerable interest from the locals.

Villagers say that every year, as winter arrives, this ritual of collecting sap and making jaggery brings new life to the rural areas.

Asha Md. Zillur Rahman from Natore Lalpur said, “Here, there are about 700–800 date palm trees. We sell the sap at 100 Taka per liter and the jaggery at 300 Taka per kilogram. This delicious and pure jaggery is now being sent not only to the local market but also to neighboring districts.”
